Recipe for Kacchi Biryani
Ingredients: * Marinade Ingredients:
500g of mutton with bones
One cup of plain yogurt
twice as much ginger-garlic paste
2 tablespoons biryani masala
One teaspoon red chili powder
A half-tsp of turmeric powder
One teaspoon of garam masala
Two tablespoons of lemon juice
Add salt to taste.
Regarding the Rice:
Two cups of basmati rice
Four cups of water
4-5 pods of green cardamom
two to three cloves
One cinnamon stick and one bay leaf
Add salt to taste.
Regarding the Layering:
Two big onions, cut thinly
Two tablespoons of oil or ghee
half a cup of milk
An pinch of strands of saffron
freshly cut coriander leaves
chopped fresh mint leaves
Guidelines:
Marinate the mutton:
In a large bowl, mix yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, garam masala, lemon juice, and salt.
Include the mutton.
