Fried Rice Recipe

Ingredients:

2cups of cooked rice (preferably day-old)

2tablespoons vegetable oil or sesame oil

2eggs, lightly beaten

1 small onion, diced

2-3 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, corn, etc.)

½ cup cooked chicken, shrimp, pork, or tofu (optional)

2-3 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil (for garnish)

2-3 green onions, sliced

Salt and pepper to taste

Instructions:

  1. Prepare the Rice: If you’re using fresh rice, spread it on a baking sheet to let it cool for about 30 minutes. Fried rice works best with cold, day-old rice as it is drier and less sticky. The grains separate more easily, preventing the fried rice from becoming mushy.
  2. Cook the Eggs: Heat 1 tablespoon of oil in a large wok or frying pan over medium heat. Add the beaten eggs and cook, scrambling them until they are fully cooked lightly golden. Once done, transfer the scrambled eggs to a plate set aside.
  3. Stir-Fry the Vegetables: In the same wok, add another tablespoon of oil. Add the diced onion and cook for 2-3 minutes until softened. Add the garlic and stir-fry for another 30 seconds until fragrant. Then, toss in your mixed vegetables and stir-fry them for about 3-4 minutes. If using a protein (chicken, shrimp, pork, or tofu), add it at this stage and cook until heated through.
  4. Add the Rice: Increase the heat to medium-high and add the cooled or day-old rice to the pan. Break up any clumps of rice with a spatula and stir-fry everything together, ensuring the rice is evenly coated with oil and begins to get a slight crisp to it.
  5. Season the Rice: Pour in the soy sauce and oyster sauce (if using), stirring well to combine. Adjust the seasoning to your taste, adding a pinch of salt and pepper if needed. Stir-fry the rice for another 3-4 minutes to allow the flavors to meld and the rice to develop a nice texture.
  6. Finish with Eggs and Green Onions: Add the scrambled eggs back into the pan and gently fold them into the rice. Toss in the sliced green onions and stir for another minute.
  7. Garnish and Serve: Drizzle a little sesame oil over the fried rice for extra flavor and garnish with more green onions if desired. Serve hot and enjoy your delicious homemade fried rice.
