Chicken Korma Recipe

Chicken Korma Recipe (Serves 4-6)

Ingredients:

1 kg chicken (bone-in or boneless, cut into pieces)

2 large onions (thinly sliced)

1 cup yogurt (whisked)

1/4 cup cream (optional, for extra richness)

3 tbsp oil or ghee

1/4 cup almonds (or cashews, soaked and ground into a paste)

2 tbsp ginger-garlic paste

1 tsp cumin seeds

4-5 green cardamom pods

2-3 cloves

1 cinnamon stick

1 bay leaf

1/2 tsp turmeric powder

1 tsp red chili powder (adjust to taste)

1 tsp ground coriander

1/2 tsp garam masala

Salt (to taste)

Fresh cilantro (for garnish)

1/2 cup water (or as needed)

Instructions:

1. Preparation:

Soak almonds or cashews in warm water for 15-20 minutes. Drain and grind them into a smooth paste.

Whisk the yogurt and set it aside.

 

2. Cook the Chicken:

Heat oil or ghee in a large pan over medium heat.

Add cumin seeds, green cardamom, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.

Add the sliced onions and fry until they turn golden brown. This may take 8-10 minutes.

Add ginger-garlic paste and cook for 2-3 minutes until the raw smell disappears.

 

3. Add Spices and Chicken:

Reduce the heat to low, then add turmeric powder, red chili powder, ground coriander, and salt. Stir for a minute to coat the onions in the spices.

Add the chicken pieces and fry for about 5-7 minutes until they are browned on all sides.

 

4. Incorporate Yogurt:

Gradually add the whisked yogurt, stirring constantly to prevent curdling. Cook for 3-4 minutes until the yogurt is well blended and the chicken is coated.

 

5. Add Nut Paste and Simmer:

Stir in the almond or cashew paste and mix well.

Pour in about 1/2 cup of water to adjust the consistency of the curry.

Cover the pan and let it simmer on low heat for 20-25 minutes, or until the chicken is fully cooked and tender. Stir occasionally to prevent sticking.

 

6. Finishing Touches:

Once the chicken is cooked, stir in the cream for added richness (optional).

Sprinkle garam masala and cook for another 2-3 minutes.

 

7. Garnish and Serve:

Garnish with fresh cilantro and serve hot with naan, rice, or roti.
